Stone milling preserves the bran and germ oils in whole grain, producing flour with intact nutrients that commercial roller-milled flours lose. Freshly milled flour retains vitamin E, B vitamins, and essential fatty acids that begin degrading within days of commercial processing.
The Harvest uses corundum (near-diamond hardness) stones and handles hard wheats without stalling. Home milling gives full control over the source grain — you can buy organic or non-GMO wheat berries and mill them minutes before baking.
